Chicken Skewers in Ancho Date Sauce

Seasoning Rub - 1
tablespoon each
Granulated Onion,
Granulated Garlic, Black Pepper, Cumin,
Coriander plus 1 1/2 tablespoons of Kosher
Salt
Chicken Skewers
4 8 oz.
Chicken Breasts, sliced & skewered, seasoned
with Seasoning Rub

Medium Onion, diced
1/2
Green Bell Pepper, diced
1/3 cup
Cilantro, coarsely chopped
1/2 cup
White Wine
1 cup
Chicken Stock
To taste
Ancho Date Sauce (recipe below)

Plum tomatoes, sliced
After searing chicken,
remove from pan. Add to pan diced onion,
green bell pepper, cilantro, and white wine,
reduce by 1/2. Add 1cup chicken stock and
Ancho Date Sauce to desired thickness.
For garnish, add 2 - 3 sliced plum tomatoes.
Ancho Date Sauce
1 cup
Martinelli Apple Cider
4 cloves
Garlic
1/2 teaspoon
Cumin
1/2 teaspoon
Coriander
1 pinch
Pepper corns
1 each
Ancho Chili, dried and stem removed
1 each
Medium Onion, quartered
1/2 cup
Dates, chopped
1/2 each
Green Bell Pepper, quartered
6 sprigs
Cilantro

Plum tomatoes
1/4 cup
Tomato Juice
Place ingredients in
blender and blend until all ingredients are
well chopped. Add chicken stock if too
thick. Adjust taste with Salt and Pepper.
