1 cup California Dates, chopped

11/2 lb firm white fish, cooked, keep warm

1 Onion, chopped

1 Tbsp Butter

3 cloves Fresh Ginger, minced or 1/2 tsp Powdered Ginger

1 tsp Cinnamon

1 tsp Cumin

1/2 tsp Salt

1/4 tsp Pepper

1/8 tsp Cayenne Pepper

1-14oz can Tomatoes, diced

1-16oz jar Marinara Sauce or chunky tomato sauce

1/2 cup Silvered Almonds, toasted

2 Tbsp Lemon Juice



In a skillet, cook onion in butter over medium heat until soft.  Add garlic and ginger; cook 1 minute.  Stir in cumin, cinnamon, salt, pepper and cayenne.  Add tomatoes and marinara sauce; cook uncovered over medium heat about 8 minutes or until slightly thickened, stirring occasionally.  Add reserved dates, almonds and lemone juice.  Simmer 2 minutes.   Spoon sauce over fish.  Serve immediately.  Makes 6 servings.
