Ingredients

Topping

  • 1/2 cup flaked coconut
  • 1/4 cup brown sugar
  • 1 Tbsp. butter
  • 1 Tbsp. flour
  • 1/4 cup crushed walnuts

Batter

  • 1/3 cup cooking oil
  • 1/4 cup sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 1 cup mashed ripe bananas
  • 1 3/4 cups flour
  • 1 1/2 tsp. baking soda
  • 1/4 tsp. baking powder
  • pinch of salt
  • 1/2 cup walnut pieces
  • 3/4 cup chopped dates

Instructions

  1. Preheat oven to 325 degrees.  Grease and 8x4 loaf pan. 
  2. Combine all ingredients for topping.  Set aside.

Batter

  1. Mix oil. sugar, vanilla, eggs, bananas.
  2. Add flour, baking soda, baking powder, salt, walnuts and dates.
  3. Por into prepared pan.  Cover with topping.
  4. Bake in center of oven for 65-75 minutes or until a toothpick inserted in the center comes out clean. 
  5. Cool in pan on a rack.
